Cooked salmon keeps 3 to 4 days in the fridge at 40°F (4°C) or colder, the same as other cooked fish on the US government's storage chart. Raw salmon keeps only 1 to 2 days, so cook or freeze it soon after buying. For meal prep, eat salmon in the first half of the week; that is why sheet-pan salmon says three days.
How should you store cooked salmon?
Let it stop steaming, then put it in a sealed container in the fridge within 2 hours of cooking. Keep it in larger pieces rather than flaked: less surface means it stays moist and smells less. Keep sauces and dressings in a separate pot.
How long does salmon last in the freezer?
Cooked salmon is best within 4 to 6 months frozen. Raw salmon and other oily fish are best within 2 to 3 months. Frozen at 0°F (-18°C) it stays safe for longer, but oily fish picks up off-flavours and dries out sooner than lean fish. Wrap it tightly and press the air out of the bag; see how to prevent freezer burn.
Does salmon need to be cooked to a temperature?
Yes. Cook fish to 145°F (63°C), or until it is opaque and separates easily with a fork. Most supermarket salmon reaches that in 10 to 12 minutes in a 425°F (220°C) oven.
How do you reheat salmon without drying it out?
- Microwave at half power for 60 to 90 seconds, covered.
- Or warm it in a 275°F (135°C) oven for about 15 minutes.
- Or skip reheating: cold salmon is good in salads and rice bowls.
If you reheat it, heat it until it is hot all the way through. More tips in how to reheat meal prep.
How can you tell if cooked salmon has gone off?
A strong sour or ammonia smell, a slimy surface, or a dull, milky film mean throw it away. Fish smells stronger after a day in the fridge, but it should not smell sour. As with all leftovers, the bacteria that cause food poisoning do not always change the smell, so go by the 3 to 4 days.
What about canned salmon and tuna?
Once opened, canned fish keeps 3 to 4 days in a covered container in the fridge, not in the can. It is a good backup protein for the end of the week: lemony tuna pasta salad uses it. For other foods, see how long meal prep lasts and how long cooked chicken lasts.
