Not well, if it is the usual creamy kind. Mayonnaise-based coleslaw separates when it thaws: the dressing splits into oil and liquid, and the cabbage goes limp and watery. Vinegar-based coleslaw, without mayonnaise, freezes better, but it still loses most of its crunch. The better plan is to make slaw in smaller batches and keep it in the fridge.

How long does coleslaw last in the fridge?

Homemade or opened coleslaw keeps about 3 to 5 days in the fridge at 40°F (4°C) or colder, like other prepared deli salads. Keep it covered, and do not leave it out for more than 2 hours, or 1 hour in hot weather. Throw it out if it smells sour or the liquid turns cloudy.

How do you make coleslaw that keeps all week?

Store the shredded vegetables and the dressing separately, and mix a portion just before eating. Undressed shredded cabbage and carrot stay crisp for 4 to 5 days in a sealed container with a dry paper towel. That is the same approach as cold peanut noodle salad, which keeps its sauce in a separate pot. More in how to keep meal prep salads fresh.

Can you freeze vinegar coleslaw?

Yes, for up to about 2 months. Mix shredded cabbage and carrot with a vinegar, oil and sugar dressing, pack it into freezer bags with the air pressed out, and thaw it in the fridge. Drain off the extra liquid and add fresh dressing before eating. Expect a softer, pickle-like texture.

Does coleslaw keep better with a vinegar dressing?

In the fridge, a little: vinegar slows spoilage and the cabbage softens more slowly, so a vinegar slaw still tastes fresh on day four. A creamy slaw made with yogurt or mayonnaise is best within three days. Either way, keep it cold and covered, and serve it straight from the fridge.

Can you freeze the cabbage for coleslaw?

Not for coleslaw: frozen cabbage is soft. Blanched frozen cabbage is good for cooking, in soups and stir-fries; see can you freeze cabbage.

What can you do with leftover coleslaw?

Use it within a few days on burgers, in wraps, or stirred into a stir-fry at the end of cooking. Leftover cabbage keeps for weeks whole in the fridge, so buying a whole head and shredding as needed is cheaper than ready-made slaw; see a budget meal prep pantry.
