Freezing turns the water inside food into ice crystals. Foods with a lot of water and a delicate structure collapse when they thaw. The food is still safe. The problem is texture.

Which foods freeze badly?

  • Lettuce, cucumber, raw tomato and other salad vegetables. They turn limp and watery.
  • Yogurt, sour cream and mayonnaise-based sauces. They split.
  • Fried or crisp food. It goes soft.
  • Hard-boiled eggs. The whites turn rubbery.
  • Whole cooked potatoes, which can turn grainy. Mashed potato freezes better.
  • Soft cheeses such as cottage cheese and ricotta on their own. They become crumbly.
  • Cooked pasta in thin, watery sauces. It goes soft.

Why do creamy sauces split?

Emulsions hold fat and water together. Ice crystals break that structure, so the sauce separates into watery and grainy parts when it thaws. Sauces thickened with flour or cooked into a dish hold up better than ones stirred in cold.

What is the workaround?

Freeze the cooked base and add the delicate part on the day.

  • Burrito filling: freeze without salsa, lettuce or sour cream.
  • Curry: freeze before adding yogurt or fresh herbs.
  • Soup: freeze before adding cream.
  • Grain bowls: freeze the grain and protein, add fresh vegetables later.
  • Pasta dishes: freeze the sauce and cook pasta fresh.

Which recipes should stay in the fridge?

These are made for four days and should not be frozen.

Each recipe page says whether it suits the freezer.

Are there exceptions?

Yes. Ingredients that freeze badly alone often freeze fine inside a cooked dish. Cottage cheese baked into egg bites, potatoes in a soup and cheese melted in a burrito are all fine.

Is it unsafe to freeze these?

No. Freezing does not make food unsafe. It only changes how it eats. If you have already frozen something on this list, it is fine to use in cooking, a soup or a smoothie.

What if you want lunches for five days?

Make four days of a fridge recipe and freeze one portion of something that does freeze, such as soup or chili, for the fifth day. See how long meal prep lasts.
