Yes, you can freeze deli meat. Sliced ham, turkey, chicken, roast beef and salami all freeze for 1 to 2 months at their best, according to the US government's storage chart. The texture can turn a little wetter, so frozen deli meat is best in sandwiches, wraps and cooked dishes rather than on a platter.

How long does deli meat last in the fridge?

  • Opened packs, or meat sliced at the deli counter: 3 to 5 days.
  • Unopened sealed packs: up to 2 weeks, and no later than the use-by date.

Keep it in the coldest part of the fridge, at 40°F (4°C) or below.

How do you freeze deli meat?

  • Freeze it as soon as you know you will not use it within a few days.
  • Separate slices with baking paper, in portions for one or two sandwiches.
  • Wrap tightly, put in a freezer bag, press out the air and label with the date. See how to prevent freezer burn.

How do you thaw it?

Overnight in the fridge, then use it within 3 to 5 days. Do not thaw it on the counter. For sandwiches packed the night before, you can put frozen slices straight into the sandwich: they thaw in the fridge by morning. More in how to thaw meal prep safely.

Is deli meat safe for everyone?

Ready-to-eat deli meats can carry Listeria, which can grow slowly even in the fridge. US food safety agencies advise people at higher risk, including pregnant women, older adults and people with weakened immune systems, to heat deli meat until steaming hot, 165°F (74°C), before eating. Follow the advice of your own doctor or midwife.
