Hard-boiled eggs keep for one week in the fridge, whether they are peeled or still in their shells. That is the figure on the US government's cold storage chart. Count from the day you cooked them, and keep them at 40°F (4°C) or colder.

Peeled or unpeeled: which keeps better?

Both keep a week, but unpeeled eggs stay moister and pick up fewer fridge smells. If you peel them ahead, store them in a sealed container and eat them within the week. A damp paper towel in the container stops the whites drying out.

How long can they sit out of the fridge?

No more than 2 hours at room temperature, or 1 hour if it is hotter than 90°F. That includes the time on your desk at work. If there is no fridge, pack them with an ice pack in an insulated bag. Meal prep for work with no fridge has the details.

Can you freeze hard-boiled eggs?

Not well. The whites turn rubbery and watery when they thaw. Cooked yolks on their own freeze better, and baked egg dishes such as egg and veggie muffin cups and cottage cheese egg bites freeze for about two months.

How do you know if one has gone off?

A sulphur smell stronger than normal or a slimy shell means throw it away. As with any food, the bacteria that cause food poisoning do not always change the smell, so go by the date: after a week, throw them out.

How do you cook them so they peel easily?

Lower the eggs into water that is already boiling, cook for 10 to 11 minutes, then move them straight into iced water for five minutes. Eggs that are a week or two old peel more easily than very fresh ones. More snack ideas are in high-protein snacks you can prep on Sunday.

What about egg salad?

Egg salad made with mayonnaise or yogurt keeps three to five days in the fridge, less than whole eggs, so make it in smaller batches. Keep it cold until you eat it.

How much protein is in an egg?

About 6 grams in a large egg, so two eggs add about 12 grams to a lunch. For more ways to reach your protein target, read hitting your protein target without protein powder and how long meal prep lasts.
