Egg salad keeps 3 to 4 days in the fridge. The USDA FoodKeeper data gives 3 to 4 days for egg salad, and the FoodSafety.gov cold storage chart gives 3 to 4 days for egg, chicken, ham, tuna and macaroni salads. Neither source recommends freezing it. If you are making it for the week ahead, make it in two smaller batches rather than one big one.
How long does egg salad last in the fridge?
Three to four days at 40°F (4°C) or colder, in a sealed container. Put it in the fridge within 2 hours of making it. Count from the day you made it. Hard-boiled eggs on their own keep a week; see how long hard-boiled eggs last.
Can you freeze egg salad?
The FoodKeeper lists freezing as not recommended, and the cold storage chart says these salads do not freeze well. The whites turn rubbery and watery when they thaw. Cooked egg whites and the sauce are better kept apart if you want to freeze anything. For how eggs behave in the freezer, including what to do with yolks and whole eggs, see can you freeze eggs.
How to make egg salad last the week
- Boil the eggs, chill them in cold water, and refrigerate them in their shell. Peel and mix only what you will eat in the next 2 days.
- Use a clean spoon every time. Crumbs and dips from sandwiches carry bacteria back into the tub.
- Keep the container at the back of the fridge, not in the door, where the temperature swings.
- Label it with the date it was made. See how to label meal prep.
How can you tell if egg salad has gone off?
A sulphur or sour smell, a slimy texture or a watery pool of liquid means throw it away. Do not rely on smell alone, because food can be unsafe and still look and smell normal. If it is past 4 days, or it was out of the fridge for more than 2 hours, throw it out.
Is egg salad safe to pack in a lunch box?
Only with a cold source. Pack it straight from the fridge in an insulated bag with a frozen ice pack, and keep it in a fridge at work if you can. If it has been out for more than 2 hours, do not eat it. The work lunch with no fridge guide lists lunches that cope better with a warm bag.
Egg dishes that keep better
Baked egg dishes you reheat, such as the egg veggie muffins, keep and freeze better than a mixed salad. For a breakfast-focused plan, see high protein breakfast meal prep.
